The NEWEST LUNCH OBSESSION!!!!! Utterly brilliant, people. Not only does SALAD IN A JAR save space in your fridge, it also reduces food waste and gets non-salad eaters (me) to mow down daily. THE ARRANGEMENT From BOTTOM to TOP: Dressing Shredded carrots Cherry tomatoes Sunflower seeds Hard boiled eggs Baby spinach DIRECTIONS1) Arrange ingredients in a large mason jar
2) Store in fridge for up to a week
3) When ready to eat: shake jar, place on a plate, and eat!

I started having dressed up Greek yogurt for my morning snack and the possibilities are delicious! I buy a big tub of plain Fage fat free Greek yogurt each week, it’s my favorite brand because it’s really rich and thick and has a TON of protein! This is a really filling snack that helps keep me energized throughout the morning and is perfect between classes or even packed up on the run. I always try to get some kind of carb in with my yogurt (bananas, other fruits, cereal) so that I get a balance of immediate and long lasting energy. :)

Crunchy Veggie Wrap
Slice up:
- some red cabbage
- 1 carrot
- 1 red bell pepper
- 1 cuccumber (take out the inside seeds)
- 1 tomato
Then assemble the wrap by layering the veggies:
- hummus
- tomato
- red bell peppers
- cuccumbers
- carrots
- red cabbage
- alfalfa sprouts
- crumbled feta cheese (you can use any other kind of cheese)
- salt and pepper
- tabasco sauce (optional)
- fresh spinach leaves
Wrap it up & you’re done!
So good you won’t even realize how healthy it is. Great for school, college, work, on the go. Prepare the ingredients a day ahead to make your mornings a breeze.

How to Make Carrot “Pasta”
1. Get a medium/ large carrot, cut the ends off, and peel off the outer layer. Then, peel long strips off until you reach the center (I personally dislike the inside of a carrot. I don’t know why… I don’t use that part lol)
2. Make the thicker strips thinner by slicing them lengthwise. This step is completely optional, but I like it do it! Now you have your finished “noodles”!
3. Put them into a frying pan with some olive oil (or avocado oil), salt, and pepper. Cook them for a couple minutes, pushing them around on the pan until they are soft
4. Add however much sauce you want to the pan. Stir the carrots and sauce together to warm it up. I used tomato sauce with onions :)
5. Enjoy! This is so good, even if the pictures don’t do it justice.

Healthy Chocolate Blueberry Banana Cupcakes
w/ Coconut Banana Frosting (and toasted coconut/chocochips on top)

- 1 teaspoon olive oil
- portobello mushroom cap
- thyme
- pepper
- 1 egg
- egg fixings(cheese, peppers, scallions, spinach, etc)
- Set your oven to high broil and spray the cooking sheet with non stick spray. Wash your mushroom and gently dry it. Put mushroom gill side up on the baking sheet and drizzle with olive oil, thyme, and pepper. Broil for about 3-5 minutes or until it is the texture you like.
- Fry or poach(I ain’t got time for all dat….) your egg, I added scallions to mine but you can add whatever your little fucking heart wants.
- Put your egg on top of the mushroom cap when it is done, boom. Delicious, elegant, rich, fancy as fuck looking breakfast.

FINALLY getting around to my oatmeal recipes! So ill give you guys my basic use for my base than I will go to the variations from there!
Ingredients:
- 1/2 cup of oatmeal or oat bran
- 1 banana
- 2 tsp fresh grated ginger
- dash of cinnamon
- 1 packet or truvia or natural sweetener (equivalent to 1 tbsp of sugar i think)
- 1/2 cup almond milk (or any other milk) 1/2 cup water
- 1 tbsp vanilla extract
- Boil 1/2 cup of water and 1/2 cup of milk and add in oats
- Quickly and consistently whisk oats until they are thickened.
- Once thickened remove from heat and place in a bowl, add the rest of the ingredients and mix well and thoroughly (especially the cinnamon!)
- Let sit for 10-15 minutes to allow the oats to thicken and let the flavours soak in!
Here are some variations for the topping for you guys!
- Baked Apple Oatmeal: instead of putting banana in the base have pre-baked apples to stir into oats (bake a bunch of apples with lemon juice and cranberries and let them sit in the oven on 350 until soft, sprinkle with cinnamon nd sugar as well!) and you can add 1/4 cup of graham cracker crumbs to the base to flavor it up and provide what tastes and flavors the oats like a crust to an apple pie! Add in apples one you are done stirring in all the ingredients into the oats, don’t over mix so that it becomes like apple sauce! top with baked walnuts of almond butter :)
- Berry Bonanza Oatmeal: microwave base of oatmeal, slice up any available berries you have (i usually do blackberries, blueberries, strawberries, and raspberries) and microwave them for 40-50 seconds until juice comes from the berries but not to melted so that the berries get all shriveled! Place them on top of your warm base and place a dollop of nut butter and than microwave for 30 seconds so that the nut butter gets all melty :)
- Chocolate Cherry Bomb: keep the regular base oatmeal but replace almond milk for coconut milk and add 1-2 tbsp of cocoa powder to the base and a bit of extra sugar. Melt pitted cherries in the microwave and top with toasted coconut and a bit more dusted cocoa powder and honey
- Fig Strawberry Oats: Melt figs and strawberries until juicy and put on oats with a drizzle of honey and add some nutmeg and cloves to the base
- Banana Blueberry Cherry Muffin Oats: let the base of the oatmeal sit over night with 2 tbsp of almond milk sitting on top. In the morning microwave oats and mix in the milk after you microwave ti for 20-30 seconds and you will realize the oats are much thicker and smell much more flavorful. Melt blueberries on top and roast cherries in the pan with some vanilla bean and honey and top your oats off with some cashew butter is my favorite on these!
- Mango Strawberry Coconut Oats: Add chopped mango and strawberries in the microwave until there is a slight juice, top on oats with toasted coconut and melted sun butter :)

Greek yogurt is a fantastic baking swap for butter- it makes these brownies rich and chocolaty, moist and fat free! I tried using it in my lighter Greek yogurt cupcakes and it worked so well I thought I’d give it a try with brownies too! You can make these in a traditional brownie pan but I love getting perfect brownies in cupcake tins- you get the gooey center and chewy edges on every piece! Mix and match whatever fruits, extract, nuts or anything else you like in your brownies, these are just a suggestion to get you started! (The mint were my favorite though!)
